Fermentation lasts 15days on skins with pumping-over twice a day. Malolactic fermentation,maturing in stainless-steel tanks with regular racking.
CHARACTER
Clearly fruity nose of violet, raspberry and redcurrant. A brilliant garnet colour with hints of purple. Typical character: balanced and fruity .
FOOD/WINE PAIRING
It will give you its best with pheasant or lamb casserole, roast meat, beef in sauce, mushrooms and all savoury pies.
